The core of the shun premier blade is made of extremely
hard vg max steel and is encased in 32 layers of damascus steel
The Shun Premier Tim Mälzer series has been specifically tailored to the needs and requirements of professional chefs. In this premium series, the high-quality material properties of the well-known Shun Classic series are combined with a completely new and impressive overall appearance. The blade is divided into three different textures: the back of the blade to the middle of the blade has a hammered surface, known as Tsuchime. This texture is followed by a finely matted Damascus grain, typical of Shun. The blade is completed by its highly polished precision cutting edge. The meticulously machined blade is paired with a medium brown, grained, walnut wood handle. The blade’s particularly hard and durable steel core ensures tremendous sharpness and long-lasting cutting performance.
The core of the Shun Premier blade is made of extremely hard VG Max steel and is encased in 32 layers of Damascus steel. This combination of different steel grades makes the blade both hard and flexible. The double-sided blade is easy to use because it is lightweight and guarantees a clean and precise cut.
The hammered surface – known in Japan as Tsuchime – is used not only for aesthetic reasons, but also because it facilitates the removal of material from the blade, thanks to the small pockets of air which result.
The handle is made of walnut wood. Thanks to its symmetrical shape, it is suitable for both left-handed and right-handed users. An integrated tang ensures stability and balance when cutting. As a special touch, the handle end has been etched with a Tim Mälzer bull’s head, the hallmark of the professional chef.
